Black Bean Brownies

OK, I made my first batch.. I am very happy with the way they taste. They are sweet and chocolatey and if a person did not know, they'd never guess there were beans in there. The texture is more creamy than brownie-like. I am not sure if this is because I under-baked or if this is just the way these are always going to be because they are flour-free. I like then a lot though. If you are counting calories, my estimation for the whole tray is approx. 6,500. I divided them into 32 servings, so each one of those is appox. 200 to 220 calories each.

My version of the recipe:

Into the blender:
4 eggs, blend 30 seconds, then:

2 c drained black beans
3/4 tsp baking powder
1/2 tsp salt
--------------------------------

Into the double boiler*:
1 1/4 stick unsalted butter, melt, then:

1/4 c. really strong coffee (I used 1/4 c. grounds & 1/4 c. water to brew)
12 oz semi-sweet choc, stir until just starting to melt,
take off heat, stir until totally melted, then add:

1 3/4 c. sugar
--------------------------------

In a large bowl, mix the stuff from the blender with the stuff from the double boiler, pour into a 11x13x2 baking dish of some sort (I greased mine & lined it with parchment paper), bake at 325F (pre-heated) until tester (I use a pairing knife) comes out clean. In my oven, it took 50 minutes (although now I think I should have let it stay in there the whole hour)..

Optional:
I also used 2 c. walnuts, pureeing 1 c. in food processor first and adding that into the blender, and mixing the unpureed cup into the large bowl with everything else.

* Note: (just in case) my "double boiler" is basically two smallish stainless steel pots, stacked on top of each other; the one on the bottom is a little smaller and about 1/2 filled with simmering water, the one sitting on top has the stuff I need melted.

maple syrup vs sugar?

I have this Strange Brownie recipe (to be provided below) where sugar is replaced by maple syrup. I suppose the person felt that syrup was "healthy" because sugar was more processed? I mean, it's certainly just as fattening.. /o\

Note: I do have some maple syrup. But I am not sure about using it. I think it will um, compromise the flavor? So I might actually just use reg sugar and then brew the actual coffee to compensate for the removal of liquid (syrup)? Anyway, here is the recipe as is:

Ingredients:

4 ounces unsweetened baking chocolate
1/2 cup butter or coconut oil
4 eggs
3/4 cup maple syrup
2 cups or 1 (15-ounce) can black beans, (drained??) pureed
2 1/2 tablespoons instant grain coffee substitute (like Cafix or Inka)
1 cup chopped pecans, walnuts, almonds, or other nut

Directions:

Preheat oven to 350 degrees. Oil or butter an 8-inch baking pan. Melt chocolate and butter or oil together in small saucepan. In mixing bowl, beat eggs and maple syrup together. Add melted chocolate mixture and beat well. Beat in bean puree and coffee substitute. Fold in nuts. Pour batter into prepared pan. Bake 40 to 45 minutes, or until set. If you press your finger in the middle, it should make a little dent. Don't overbake. Cool. Cut into 2-inch squares.

In a large bowl (or right in the measuring cup!) stir together flour, cornmeal, baking powder, and salt. In another large bowl, combine the melted butter, oil, and sugar; stir in milk and egg. Combine the wet ingredients with the dry ones and stir until they are just blended. Spoon the batter into the paper liners, filling each one almost to the top. Bake for 20 minutes, until a toothpick comes out clean (I do not have toothpicks, so I use a paring knife instead). Cool 15 min. and remove from the pan.

I've had this bunch of cranberries that I froze a long long time ago. Turns out, there were 1.5 cups.. to that, I added 1.5 cups water, 1/2 cup brown sugar, a packet of "onion soup", about a teaspoon of cayenne and and a tablespoon of cornstarch. I brought all that to boil, stirring like mad, and simmered for about 2 min, stirring non-stop. Then I put it through a sieve, getting rid of all the mushy bits (blegh). I really like this sauce! I've used it as a sauce for chicken and rice, and as a dipping sauce for the potato & chicken & spinach & mozzarella burritos....

...I suppose instead of using "onion soup" I could have used vegetable stock as my liquid, and added in a bit of fried or oven-roasted onion... or! instead of using corn starch to thicken it, I could have kept the pulp and put the whole thing through a blender?...

Tip: (just in case someone doesn't know! /o\) cornstarch has to be the first thing in the pot, then add just a few drops of the (cold) liquid and stir until a paste forms, then stir the rest of the liquid in, then all the other stuff, otherwise cornstarch will form clumps..
